Owners Lachlan & Susan Pease have lived in the Gabba area for 12 years & are excited about the rejuvenation the area is experiencing. The timing was right to see redbox canteen open & join Woolloongabba’s emergence as Brisbane’s latest foodie hot spot.
Lachlan has based the redbox canteen + catering menu around good food: simple dishes done exceptionally well. All the menu items are prepared fresh on site in our kitchen.
Owner Chef Lachlan Pease’ background:
Lachlan hails from Tasmania originally. Once qualified, the lure of Europe and London took him overseas for six years. The major influence for his career came at the critically acclaimed London restaurant ‘Kensington Place’. Chef Rowley Leigh was a keen advocate of classical technique and the use of fresh local ingredients to create distinctive, balanced flavour combinations. A three year stint in Asia has also given Lachlan a good understanding of Asian flavours and foods.
On returning to Australia Lachlan has worked in both local BYO’s to up market a la carte restaurants and in more recent years, catering for boardroom lunches at top tier firms to diverse events such as weddings and food expos.
